As an ode to the Year of the Rat, Akira Back pulled a whimiscal spin to the signature AB Otoro Yu Sheng by incorporating Chinese Rice Noodles (aka Rat tail noodle) as part of the salad. Combining fresh ingredients with a touch of ingenuity, the rice noodles complement eight other Korean-Japanese condiments highlighted by Korean daikon radish, Japanese chuka wakame, pickled fennel and sweet ginger, to deliver a balanced combination of sweet, sour and savoury taste.
